Vicopisano
Produced by the Bovoli family on their estate situated at the base of the mountains surrounding Pisa in Tuscany, this oil is amber colored with a sweet flavor of vanilla and apple. The frantoio olives are harvested and crushed using a traditional granite millstone. The low acidity gives it great versatility.

Tenuta Cafaggio
Tenuta Cafaggio is located in Impruneta, the Tuscan hill town famous for terra cotta between the valleys of the Greve and Ema Rivers. Hand-picked Frantoio, Moraiolo, and Leccino olives are blended to create an extra virgin olive oil of low acidity. Pleasantly, spicy with a touch of artichoke flavor.

Colle Nobile Raggia
Colle Nobile Raggia monocultivar extra virgin olive oil is produced by Giorgio Tonti near the village of San Marcello, in the Marche region. Oil production is small—only 1,600 bottles a year—and Giorgio's painstaking attention and to his land gained this exceptional oil "low environmental impact" certification. The Raggia olive produces a fruity oil that is crystal green in color. Intense aroma of fresh grass and rosemary, sweetness with hints of hazelnuts and walnuts to the palate, and a perfectly balanced flavor makes the versatile Raggia olive oil great for cooking and finishing.

Benza Frantoiano Buonolio
Produced in Liguria by the Benza Family since 1853, Benza Frantoiano "Buonolio" extra virgin olive oil is made with Taggiasca, the olive variety which most characterizes oil production in the province of Imperia. Taggiasca olives produce an oil of extremely low acidity and balance. Liguria's gentle, temperate climate allows for an extended harvest time: olives are picked between November and February, before they reach full maturity and immediately enter the carefully monitored production cycle.

Disisa
Disisa Extra Virgin Olive Oil is made in Sicily by the Di Lorenzo Family at their 19th century Tenuta Disisa family estate in the hills of Monreale. The olives, Cerasuola, Biancolilla and Nocellara del Belice varieties, are hand picked and cold pressed the same day in order to preserve their flavor. The oil is unfiltered and allowed to decant naturally. Extremely low in acidity, it is a perfect balance between fruit and spice. Use on ripe tomatoes, vegetables, grilled fish or meat.

Dáfni
Dáfni Greek Extra Virgin Olive Oil is a single variety produced from the legendary Koroneiki tree which is native to Lakonía, Greece. Lakonía, which lies at the southeast end of the Peloponnese peninsula in Greece provides an exceptional climate for growing olive trees. The Koroneiki olive has one of the highest oil contents (20-30% oil), yet it is very small and difficult to cultivate. This oil has a complex aroma that is primarily floral with some nutty notes and hints of apple, wood and butter. It is smooth and balanced on palate with a subtle pepper finish. It's a great finishing oil and compliments a wide variety of foods. Wonderful for bread dipping, marinades, drizzling over salads, steamed vegetables, pasta, potatoes, fish, chicken and pork.

La Quagliera
Prisca Montani runs a small olive oil production on her little estate "Azienda Agricola La Quagliera". The estate sits on the beautiful hills surrounding the city of Spoltore, in the region of Abruzzo, close to the Adriatic Sea and facing the impressive Majella and Gran Sasso Mountains. The oil is a blend of two olives, Dritta and Leccino, both from the region of Abruzzo. As a result, the solid straight-forward taste of Leccino is rounded by the gentler, fruity taste of the Dritta. Prisca affords great attention to the growth and health of every single tree. During the harvest, the olives are picked manually and pressed in the family mill within 24 hours of harvesting.
